Rio Bamba Chef Jay Cohen, Rochester, New York

      Chef Cohen was the Chef de Cuisine at Bouley in 1992 and hired Matthew to his first position of Garde Manger in David Bouley’s kitchen. Chef Cohen since returned to native Rochester and opened the finest restaurant on the shores of Lake Ontario in an historic and renovated building. After Matthew and Wendy bought Carl’s/Plates, they flew for an overnight to Rochester to celebrate in the Rio Bamba dining room with Gretchen and Jay Cohen, and learn what they could about becoming restaurateurs.
